Crêpes (Gluten Free and Dairy Free Recipe)

For about 15 crêpes                                                          Gluten Free and Dairy Free Recipe
  • 250g of gluten-free flour blend
  • 50g of white crystal sugar
  • 4 eggs
  • 45cl of rice milk
  • 1 table spoon of oil
  • Pinch of salt
  • 1 table spoon of orange blossom water

In a large mixing bowl, mix the flour, sugar and salt.

Make a well in the center of the flour and add the eggs and oil. Stir in the well while gradually incorporating the flour from the sides of the well. Stir until thoroughly mixed.

Very slowly pour in the milk while stirring. Keep stirring until small bubbles form on the surface.

Pour in the orange blossom water.
(The batter must be liquid. Add a bit of water if necessary.)

Pour a little vegetable oil on a folded paper towel and wipe the pan evenly before cooking each crêpe. (use preferably a tefal pan)
Pour in 2-3 table spoons of batter and quickly move the pan around , so that the batter spreads evenly, covering the whole surface with a thin layer.
Let cook for about 1 minute. Then flip and cook the other side for about 30 seconds.

Note:
This recipe is well suited for desserts (with sugar, jam, melted chocolate, sweet chestnut purée,...) For "salty crêpes", the Galettes recipe is better suited.
